We had a heavy, but quiet rainstorm all through the night, and when my alarm went off at 6am for my morning workout, I decided to turn it off and sleep in. It’s not often that a peaceful storm and a day with no appointments coincide, so I seized the moment ­čÖé

Homemade Whole Wheat Pizza & Workout

Pizza is some of my all time favorite food. It’s so gooey good! What’s not to love about cheese and bread? And the toppings? The possibilities are endless! Tilapia Puxa Vida & Workout

Mr. Bean and I enjoy eating fish. We enjoy many different types of fish, too. Salmon, sea bass, mahi, grouper, etc. Unfortunately fish isn’t always in the budget. That’s why we usually buy tilapia. Our little market sometimes has them on sale for $2.19/lb for a ten pound box of frozen tilapia fillets. So that’s usually what’s in our freezer. Every now and then we find a sale on salmon or some tuna steaks, but most of the time it’s tilapia. And I’m not complaining, it’s just I know what people say about tilapia. I know it’s farm-raised, and it’s not very high in omega-3s, but even though we have a ten pound box of it in our freezer, we don’t eat it that often, and from the research I have done myself, I haven’t found enough evidence to convince me that tilapia should be nixed from my table. Every day when I get a few minutes I go around the house and tape the baseboard borders so I can finally get to caulking some of those gaps. Almond Crusted Eggplant & Workout

I really have enjoyed the meals I’ve been preparing since dropping meat and poultry from my diet. They’re more bright, colorful, fresh, and so yummy. But every now and then, I do miss a recipe or two from my past rotation. One of those recipes being my Baked Almond-Crusted Chicken. This was my favorite way to make chicken. It was just a simple crust made by dipping the chicken breasts in egg and then in a mix of ground almonds and seasonings. The result was a crunchy, healthy, and flavorful chicken that didn’t even need a sauce and paired well with everything! So, when chicken was nixed from my diet, I just learned to live without it. Until I found this recipe from Jessica in the Kitchen┬áfor Almond Crusted Eggplant. Now why hadn’t I thought of this before? I had to try! And it turned out GREAT! DIY Play Kitchen & Workout

I have been itching for a DIY. I have this need to create things, and though I’m not the best at it, I still fall in love with whatever I create. That’s most important, right?
With work being non-stop and our budget the tightest it’s ever been, it’s been nearly impossible to complete a project or even plan one. It’s been so busy that I’ve had to schedule a lunch breaks to make sure I eat! PB&J Smoothie & Workout

I really enjoy smoothies. I even worked at a smoothie shop when I was a teenager! It was my grandmother’s shop, and it was really great. I made friends, I learned responsibility, and I made money.
